If "octopus" were from Latin, it would most likely have the plural "octopi". However, "octopus" is from Ancient Greek, not Latin, and its proper plural is "ὀκτώποδες" [oktopodes], which may be written as "octopodes" and pronounced "ok-TOH-poh-des". If this is not desired, the English-style plural "octopuses" is also acceptable.
